Brisk Business in Dried Fish
This being Semana Santa (Holy Week) the dried fish sellers were out in force and doing a big business in Latacunga today.
Abstaining from meat is practiced during Semana Santa, and dried fish is also a key ingredient in fanesca, a traditional soup Ecuadorians eat a lot of on Semana Santa.
This fish stall was interesting, featuring dried fish with a bright yellow color. They must have used achiote or some other spice to give the fish this color.
This stall was more typical. There must have been about a dozen stalls like this selling dried fish today.
