Best Breakfast Yet!

Llapingachos.

We have been seeing it on the menu ever since our first day in Ecuador but we waited until today to try it.
The mercado in BaƱos may have the best breakfast in the city, and most people seemed to be having the llapingachos plate. Llapingachos are little balls of mashed potatoes browned on a grill and served with vegetables, and avocado, a piece of sausage, and two eggs. We pepped it up with the homemade Ecuadorian salsa we see everywhere (always the same). The vegetables on the this plate were a real surprise, including a nice portion of beets (hidden in the picture - the potato balls are under the eggs). This was an amazingly good breakfast for $2.50 (you really have to click on this friends).
