Sancocho

Sancocho is Colombian comfort food. A lot of it will be eaten this Dia Mama weekend.

I've read that it is often served on the weekend for big family gatherings.

We had it for lunch today.

It can be made with a variety of meats or fish, but chicken is the most traditional version.

When it was served I still had some work to do to get it ready for eating. I had to get the chicken off the bone and saw the corn off the cob, and dice up the avocado that is served on the side and add a little of the rice that is served on the side.


Here's how mine looked a few minutes later when I was ready to dig in.

Soups and stews may be the highlight of Colombian cuisine. You really can't go wrong with an order of sancocho or ajiaco.
