Locro and Empandas


After all that tromping around to churches and museums we were ready for a good Ecuadorian lunch.

Here's a typical meal.


Ecuadorians seem to be big on soup. In fact some dishes are called "seco" (dry) just to indicate, I think, that they are not soup.

This is a very popular soup found on a lot of menus called locro. It's made with potatoes and cheese and they throw in a half an avocado for good measure. I suspect there might be some achiote used to give it the bright color.

There is also version of the soup called yagarlocro that substitutes a sausage for the avocado. We'll have to give that a try sometime. On the side are some empanadas verdes, which are basically cheese empanadas.
