Helado de Paila


Here's how you make sorbet the old fashioned way.

We first had this across the border in Ibarra where they are famous for helado de paila.

"Paila" refers to the copper pan that is used. It sits on top of ice and the sorbet is made by spinning the paila by hand in the ice and stirring the contents with a wooden paddle until it freezes.

It's basically the same process as using a hand-cranked ice cream maker.
