These freshly dug potatoes were for sale on a blanket outside a store in the village of Ingapirca.
These potatoes would be gourmet items in the States.
Potatoes originated in the Andes (more to the south in Peru and Bolivia) and were very important in the diet of the indigenous people. You mostly see these small ones here.
They are boiled or roasted and eaten whole or made into soup (locro in Ecuador).
These would be delicious just boiled a bit and served with a little butter and salt and parsley.
